Founded in 1981 by soon-to-be-law-student Sadie Kendall, Kendall Farms (originally Kendall Cheese Company) soon became known primarily for its superb crème fraîche. Working closely with local dairies until she found just the right cream, Ms. Kendall carefully adjusted the recipe and starters to achieve superb silkiness, sweetness and shine in her crème fraîche. She uses fresh Holstein cream and a proprietary starter to achieve a product that rivals the best French versions. Kendall Farms produces just crème fraîche, nothing else, and theirs is widely held to be the standard-bearer in restaurant kitchens across the nation.
