Believed to be in production from as early as the 13th century, and still created using the same methods today, Parmigiano Reggiano has worked hard and diligently to earn the title “King of Cheeses”. A grana, or hard, granular cheese that is dry and rich, full of aromas of dairy and hay, with warm milk and salt on the tongue. All authentic wheels of Parmigiano Reggiano are carefully aged and inspected by the Consorzio tasked with maintaining the integrity of the cheese – not a single inferior wheel will ever bear the Parmigiano Reggiano markings on the rind. Any cheese labeled simply “parmesan” is not authentic Reggiano. We are particularly fond of serving a sizeable hunk plated with a few precious drops of aged balsamic, and perhaps some figs for good measure.
