Originating from Sicily, Ricotta Salata is a rustic and delightful cheese that never ceases to amaze us with its popularity. Made from rich sheep’s milk, it is created by pressing the fresh curds and whey into a dense, dry, slightly spongy wheel, that is then salted and cured. The result is a cheese with a pleasantly milky flavor, nice balance of salt, and a texture akin to a dry feta. Ricotta Salata lends itself well to dicing, crumbling and shaving, and it is gorgeous on dark leafy green salads.
