Description

The most robust blue on offer at Rogue Creamery, Crater Lake Blue earned its name from its blue-green veining that resembles its namesake. Silky textured, with bold blue flavor that is not overly aggressive. Roughly modeled after a Danish blue, this raw milk blue is aged for a minimum of 90 days (but typically a month or two more).  Lovely folded into cream over gnocchi, or serve along with mostarda for a cheese course.
