Mi-Ewe cheese, from Weirauch Farm & Creamery, combines fresh sheep milk from their own herd with cow milk purchased from a small, organic Petaluma Jersey cow dairy. The natural-rind cheese is aged a minimum of five months, resulting in a semi-firm paste that is nutty and bright with faint notes of caramel. The rich sheep and Jersey milks lend themselves to a buttery, round mouthfeel. The cheese pairs beautifully with honey, apples or fruit-forward reds.
Weirauch Farm & Creamery, based on 50 certified organic acres in Petaluma, was established in 2004 by Joel and Carleen Weirauch. Their goal was to contribute in a meaningful way to a healthful local food supply, practice sustainable stewardship of their land and be a part of the growing contingent of small family farms. Their dairy sheep are certified by the Animal Welfare Approved organization, they practice rotational pasture management and their farm utilizes best practices in green building and water re-use. The Weirauch’s raise their sheep on pasture, making for better animals, better milk and better cheese.
