A mixed-milk, double-cream cheese made with cow’s milk, goat’s milk, and a touch of cream. Fresh goat’s milk comes from Vermont Creamery's local goat farmers, and the cow’s milk comes from a local co-op of 500 Vermont family dairy farmers. The curds are shaped by hand into small wheels, and moved to an aging room where the geotricum yeast slowly blooms on the surface of the cheese to create its distinct wrinkled rind. The flavor is reminiscent of crème fraiche and bright goat’s milk. The rind lends a complex and nutty finish. Excellent paired with dried fruits and nuts. Cow and goat milk.
