Though it resembles a French brie, and has the fat content of a double cream cheese, Fromage d'Affinois boasts a creamy texture reminiscent of a triple creme achieved by an ultra filtration process that breaks down fat molecules in order to further disperse them throughout the paste.  This process results in a thick, seemingly whipped, rich buttery cheese with a lingering lactic sweetness that pairs very well with champagne and fresh fruit. Cow milk.
