With their tender flesh, Chandlers don't have the pale, cottony hearts common to more commercial varieties. Chandlers don't ship well, thus their popularity at Farmer's Markets. They should be enjoyed fresh and ripe, preferably in strawberry shortcake or other preparations that make the most of their copious juice and heritage flavor.
