Part of the family of cruciferous vegetables, including broccoli and cabbage, Cauliflower is one of the kitchen's most versatile and healthy, vegetables. It is an excellent source of Vitamin C and manganese, two essential antioxidants. The head, or flower, of the cauliflower is also known as the "curd" which is essentially a grouping of undeveloped flower buds. Cauliflower lends itself exceedingly well to a wide range of cooking techniques. Steamed and pureed with olive oil, it is a terrific alternative to mashed potatoes. Cooked and riced cauliflower may be combined with eggs to make a gluten-free pancake or tortilla. It is superb in gratins, soups and curries.
