Green Cauliflower resembles white cauliflower physically, but its bright green color cheerfully differentiates it from its less colorful cousin. It gets its green hue from a cultivar that combines cauliflower with broccoli, which are closely related. Green Cauliflower is slightly sweeter than regular cauliflower, and is just as versatile. Steamed and pureed with olive oil, it is a terrific alternative to mashed potatoes, and is superb in gratins, soups and curries.
