A member of the chicory family (which includes radicchio, frisee and escarole), endive has a crisp texture and mild sweetness balanced by a hint of bitterness. One of the most complex vegetables to grow, endive is farmed in two stages. First, it spends months in the field developing a tap root with leafy greens. It is then dug up, the leaves are removed and the roots are placed in humid forcing rooms, where the root develops the characteristic red or white leaves that are endive. It's boat-shaped leaves make it a natural for appetizers. It is also delicious grilled or prepared au gratin.
