The most beguiling lemon is surely the Meyer. Its smooth and delicate, deep yellow skin holds flesh almost bursting with perfumed juice and a gentle acidity. Smaller than conventional lemons, Meyers were brought to the states in the early 20th century from China. They are believed to be a cross between a lemon and a mandarin, and their aroma verges on orange blossom when fully ripe. Excellent for their juice and rind, Meyers lend a sweet complexity to drinks, dressings, desserts, marinades and preserves.
