Jade green in color, scapes have the crisp snap of an asparagus spear, and may be prepared a variety of ways. Snip tender ends over creamy scrambled eggs or blend into a vibrant pesto. Stir fried or fresh, their flavor will be a mellower, more vegetal version of garlic.
