Also known as Dino kale, Tuscan kale or cavolo nero, lacinato kale is notable for its dark greenish-blue hue, and firm, deeply ridged leaves. It is oblong in shape, and requires longer cooking times due to its hearty nature. It benefits from long braises and stews, and twice cooking. It may also be cut into thin ribbons and enjoyed raw in salads, or fried into kale chips.
