Similar to a cantaloupe in appearance, Galia melons actually have a pale green flesh that is more reminiscent of a Honeydew. A Galia is a smallish melon, with a yellow netted rind. The more golden the rind, the sweeter the flavor, and they are known for being wonderfully juicy and refreshing. A lovely choice with great prosciutto or pureed into a chilled soup.
