New Mexico Chiles start out as fully-ripened, red Anaheim peppers, which are then dried to a dark, brick red color. Thin skinned, with earthy chile flavor and berry undertones, the New Mexico Chile may be referred to as the California Chile or Chile Colorado. New Mexico Chiles are the essential base in classic Southwestern red chile sauce.
