A diminutive green pepper, conical in shape, Padron Peppers originally hail from Spain but have happily found their way to California growers. Harvested when on the small side, Padrons are mostly mild, although the occasional hot pepper will sneak its way in now and then. The flavor is mellow and grassy, and they have long been staples on tapas menus. Blister in excellent olive oil and sprinkle with sea salt for a summery and addictive appetizer.
