Botanically speaking, bell peppers are considered fruit, even though culinarily speaking they tend to be grouped with vegetables. They are native to Mexico, Central and South America and can be found in colors ranging from red to brown to purple. Typically, unripe fruit is green, or to a lesser degree pale yellow. Some red peppers are simply fully ripened green peppers, while other varietals of red, yellow and orange peppers are from entirely different seeds. And some green peppers remain green, even when fully ripe. Reds tend to be the sweetest of the bunch. All varieties are a rich source of antioxidants and red peppers in particular have twice the Vitamin C of green peppers. Peppers are delicious and sweet fresh, and may be stuffed, sauteed, jellied, pickled, roasted and grilled.
